Vegetable pulao
Ingredients:- 2 cups basmathi rice

- 3 cups water
- 3 tbsp ginger garlic paste
- 5 green chillies
- 1 onion chopped
- 1 tomato
- 1 cinnamon small stick
- 2 cardamom
- 2 cloves
- 1 bay leaf
- 10 cashew nuts
- 1 cup coconut milk
- 6 tbsp ghee
- 1 cup carrot, beans, cauliflower, potato( diced )
- 1/2 cup green peas
- 10 coriander leaves
- 10 mint leaves
Preparation:- Heat the pressure cooker with ghee.
- Then add Cashew nuts, cinnamon, cloves and bay leaf. Saute for few mins.
- Add onions and fry untill it turns golden brown. Add tomatos, ginger garlic paste and green chillies. Saute for 5 minutes.
- Add vegetables and green peas. Combine well.
- Add rice, coconut milk, water, coriander leaves and mint leaves.
- Close the pressure cooker and cook for 2 whistles.Switch off the stove and allow it to cool for 2 mins.
- Tasty veg. pulao is ready.Serve hot with onion, curd raitha.
