Vegetable pulao

Ingredients:
  • 2 cups basmathi rice
  • 3 cups water
  • 3 tbsp ginger garlic paste
  • 5 green chillies
  • 1 onion chopped
  • 1 tomato
  • 1 cinnamon small stick
  • 2 cardamom
  • 2 cloves
  • 1 bay leaf
  • 10 cashew nuts
  • 1 cup coconut milk
  • 6 tbsp ghee
  • 1 cup carrot, beans, cauliflower, potato( diced )
  • 1/2 cup green peas
  • 10 coriander leaves
  • 10 mint leaves
Preparation:
  1. Heat the pressure cooker with ghee.
  2. Then add Cashew nuts, cinnamon, cloves and bay leaf. Saute for few mins.
  3. Add onions and fry untill it turns golden brown. Add tomatos, ginger garlic paste and green chillies. Saute for 5 minutes.
  4. Add vegetables and green peas. Combine well.
  5. Add rice, coconut milk, water, coriander leaves and mint leaves.
  6. Close the pressure cooker and cook for 2 whistles.Switch off the stove and allow it to cool for 2 mins.
  7. Tasty veg. pulao is ready.Serve hot with onion, curd raitha.
